Okay enough talk…Let’s get to work!
Here’s how we make a special Paleolithic diet pie for dessert…
You’ll need – -> (For lemon filling) a cup of lemon juice, 4 tbs of arrowroot powder, ½ cup of coconut milk, 5 tsp of lemon grind finely grated from about 4 lemons, 5 egg yolks and about ½ cup of maple syrup.
You also need a fan-forced oven to make this. By the way, only a handful of paleo diet recipes dessert in the aforesaid cookbooks requires the use of fan-forced oven.
(For Meringue) 2 tbs of maple syrup and 5 egg whites
Directions:
(1) Preheat fan-forced oven to 160°.
(2) Heat a pan on low heat and drop in the maple syrup, lemon rind and also lemon juice.
(3) Mix the arrowroot powder and coconut milk in a bowl. And then add to the lemon mixture. Stir until mixture simmers.
(4) Beat all 5 egg yolks in a bowl and add them to the simmering mixture. Stir, stir, and stir until mixture thickens. Once it has thickened, remove pan from heat and pour mixture in a pie dish.
(5) Now let’s make the meringue. What you got to do is place the 5 egg whites and maple syrup in a bowl. Then beat them together until stiff peak have formed.
(6) Scoop meringue mixture and spread on top of lemon filling mixture. Now put the pie dish in a fan-forced oven and bake until lightly brown (approximately 10 minutes or so)
Okay we’re done! Now wait for the pie to cool before you gobble it up…Enjoy one of the tastiest paleo diet recipes dessert with a small glass of mango sorbet.
Speaking of mango sorbet, there are many other great tasting dessert dishes in the paleo diet cookbooks. So far I’ve tried the mango, melon and sorbet slice, chocolate and cinnamon ice and pear custard. These are all done paleo caveman style!
