Holiday Pies for your Dining Pleasure: Cranberry Mincemeat Pie and Corn Syrup Pecan Pie

Just the names of some foods tend to make us think of the holidays and Cranberry Mincemeat Pie is one of those.  Surprise your family and friends with this holiday pie this year.  Don’t like cranberries or mincemeat?  Then try my favorite  pie for your holiday guests; Corn Syrup Pecan Pie.

CRANBERRY-MINCEMEAT PIE

pastry for a 2-crust pie
2/3 cup sugar
2 tbsp cornstarch
2/3 cup water
1 1/2 cups fresh cranberries, rinsed and drained
1 jar mincemeat
1 egg yolk
2 tbsp water

Preheat oven to 425 degrees. Line a 9 or 10-inch pie plate with a pastry; set aside.

In saucepan, combine sugar and cornstarch; add water. Over high heat, cook and stir until boiling. Add the cranberries and return to a boil. Reduce the heat and simmer the mixture for 5 to 10 minutes, stirring occasionally. Pour the mincemeat into the pastry-lined pie plate. Top with the cranberry mixture. Cover with the other pastry, vent, seal the edges and flute. Whip together the egg yolk and 2 tbsp water. Brush the egg mixture over the top pastry. Bake in the lower half of the oven for 30 minutes or until golden brown at 425 degrees. Cool before cutting.

CORN SYRUP PECAN PIE

3 eggs, slightly beaten
1 cup light corn syrup
1 cup sugar
2 tbsp margarine, melted
1 tsp vanilla
1 1/2 cups pecans
1 unbaked 9-inch pie shell

In a large bowl, stir together the eggs, corn syrup, sugar, margarine, and vanilla until well blended. Stir in the pecans (I prefer the pecans halved or coarsely chopped.) Pour mixture into the pie shell. Bake in a preheated 350 degree oven for 50 to 55 minutes or until a butter knife inserted near the center comes out clean. Cool before cutting.

Craisins Vs. Cranberry juice?

I have a reoccurring problem with UTI’s and I hate cranberry juice!! It’s waaaaay to sour for my taste… I sometimes take cranberry pills but they are huge! its rather hard for me to swallow them and the bottle says not to cut them, so I can’t half the pill like i usually do with other pills. I started eating craisins which are dried cranberries but it has added sugar. I was told that if you drank cranberry juice you could only get the kind with no sugar (hence it being super sour and tart) but I was wondering if this ’sugar’ thing applied to dried cranberries… Are dried cranberries with added sugar helping as much as the 100% no sugar added cranberry juice?
I know that juice cocktails aren’t a help… please have a source for answering this! I wanted to ask my doctor but i guess shes already gone for thanksgiving?

The added sugar is REALLY bad for your UTI. Here’s what you need to do: You need to go down to the pharmacy and ask one of the pharmacists to help you pick out some cranberry pills. They work great and there are a lot of different kinds. Don’t be embarrassed to ask for help from the pharmacist. They know what’s up.
